Bowl Full of Mush
Ingredients:
- 2 chicken skinless chicken breasts
- 1 bag frozen broccoli florets
- 1 to 2 shallots, chopped
- 1 1/2 cups french fried onions
- 2 cups shredded cheddar cheese
- 6 cups chicken flavored stuffing mix (prepared according to package, substituting chicken broth for water)
- 1 1/2 cups chicken gravy
Directions:
Preheat oven to 350°. Cut chicken into bite size pieces and brown in your choice of butter or olive oil. I personally use extra virgin olive oil for almost anything, but I'm Italian and I think I'm biased. Once browned, add in broccoli and shallots. While that's cooking, prepare stuffing with chicken broth in place of water.
Take a baking dish of your preference and fill the pan with about half of the stuffing mix, being sure to cover the entire bottom of the pan. Layer with your chicken/broccoli/shallot mixture. Pour half of the gravy over top. Sprinkle with about half your cheese and half the french friend onions. Cover with the rest of the stuffing mix and then pour the rest of the gravy over top, followed by the rest of the cheese, and topped with the onions.
Pop that sucker in the oven and bake from 15-30 minutes depending on how you feel. I generally will wait about 20 minutes, but I want super melty cheese and crunchy onions.
We made this last night and it was SO tasty looking and smelling, we devoured it before I could remember to snap a picture. But I really meant to add some in. Next time!
